Dates & Carrot Breakfast Bread


So now I am on a health trip - trying to find ways to reduce the sugar, all-purpose flour from my recipes...did a bit of experimentation with yeast...and then found my way back to the quicker variety with baking powder & soda...

Though right now I am still continuing with the carrots & dates & banana or apple pulps combinations, this particular bread recipe had agave ( for sweetness)  which I replaced with honey...the previous recipe was a whole wheat bread which was very dense - so decided to go a bit lighter this time with a combination of flours...and since this had oats(loads of goodness)...felt I could add in a bit of AP flour...the sweetness is due to the dates and honey - both of which just barely flavours the bread - and that is good for a breakfast bread..which is where I was going with this one...
However if you would like it more like a dessert you make add more honey or dates or even sugar to the mix.

The spices in this bread brings out the flavours of dates, the slight aroma of banana...and brings to mind the Christmas plum cake...making it absolutely yummy !!!


As mentioned above this is a great bread for breakfast or snack...it is not too sweet - and so can be had with butter or any fruit preserve or can be served as dessert topped with icing sugar or any other icing you prefer....I loved it the way it turned out, moist, and just lightly sweetened...so here goes the ingredients and method...


Ingredients:

2 cups flour...1/2 cup whole wheat flour, 1/2 cup all-purpose flour, 1 cup oats flour (oats crushed in mixer)
1 and 1/2 tsp baking powder
1/4 cup milk warmed in microwave
1/4 cup chopped dates 
1/4 cup yogurt
1 large ripe banana mashed
1 tsp baking soda
1/4 cup honey
2 eggs
1/4 tsp salt
1/2 tsp ginger powder
1 tsp cinnamon powder
1/4 tsp clove powder
1/4 cup olive oil 
2 medium carrots, grated
1/4 cup walnuts chopped 

Method:

1) Crush the oats in the mixer so as to get it's flour and then mix the flours, salt, spices, walnuts in a bowl along with baking powder. ( You can use all 2 cups of all purpose flour, or any other combination of the 3 flours )
2) In another bowl beat 2 eggs lightly, add the yogurt, mashed banana, and baking soda - keep aside for a while.
3) Warm the milk and add chopped dates - let it soak awhile - it softens and mixes well in the bread.
4) When the dates & milk mixture cools - add to yogurt mix, then add the carrots, and mix well, add the honey ( you could use sugar if you like instead or in addition to the honey ).
5) Add the flours mixture a bit at a time - till it is all incorporated...do not overmix...
6) Bake 180 degrees C for about 50 - 60 minutes. 
Cool on wire rack and then remove the bread from the baking tin and cool completely before cutting and serve...taste wonderful when warm with the smell of the spices coming through amazingly....

I am already planning to make it once more - to give to a cousin - she and her family love my baked goods...but this time I will add some more sweetness to it as they have quite the sweet tooth...here's hoping they enjoy it as much as I did.

Update (08/01/2015) : Instead of 1 cup of oats flour, added my current favourite ragi or nachini flour along with oats - in half cup proportion, so that it made 1/2 cup of all 4 flours, whole wheat, all purpose, oats, and ragi...it is being baked as I am writing this...had loved ragi in my other recipes and hence thought it would be a good addition to this one too...
PS: Ragi is referred to as finger millet or red millet in English.
