Cinnamon Cookies & the misadventures in the making...

I guess the title tells it all....but here goes the whole long tale...

Cinnamon Cookies

There was a story which we had heard when we were young, do not remember it properly - but it goes like this - a monkey ( or maybe a kid  who knows ) was given a banana - and asked to split it equally and give it to two children.
He peeled it and broke it in half - the halves were not equal - so to make it equal - he took a bite from the bigger half...and then he saw that the other half was a bit bigger - so then he bit from that one...and so on...
You can guess how this one ends...lol !!!

My misadventures was sort of like that story - I did follow the recipe as mentioned...but somehow found that my dough was a little dry ...to counter that I added some ghee (Indian clarified butter) - and that made it too soft and moist...so added some maida ( all purpose flour) - and then felt the sweetness was less, so the final batch was rolled in some sugar/cinnamom powder. (Now I am not sure if my story matches the one above...it just somehow bought that one to my mind)

Nyways...I made a batch with every alteration - so have some 5 different varities of the cookies...with just the one dough. :-)
See below pictures...
All 5 varities
Different textures of the cookies

I would not like you to go thru the same path, so am giving below the original recipe with an addition of cardamon.

Ingredients :

1 and half cups of  all-purpose flour (maida)
1/2 cup sugar - white granulated.
1/2 cup butter (at room temperature)
1 inch cinnamon
2 pods of cardamom (optional) - I added this cause I love the flavour of it.

Method :

1) Crush the sugar with cardamom and cinnamom to a fine powder.

2) Beat the softened butter with the above mixture till light and fluffy.

3) Add the flour to it - and mix with a spatula till it all comes together - then with your hands roll it into a soft dough.

4) Wrap the dough in a saran wrap and refrigerate for 8-10 hours or overnight.

5) Once the dough has firmed up - you can take it out - either roll out the dough and use a cookie cutter to make cookies - or pinch off small portions of dough, roll it in your palm - and then place on the baking tray - press lightly till it becomes a flat disc. Keep a gap of 1 inch between the cookies, giving it space to expand.
(I prefer the second method as it was quite difficult to roll it out).

6) Bake at 180 degrees for about 20 minutes.

7) Cookies are a litte soft to touch, but harden after a few minutes while cooling down in the baking pan.

8) Cool on a wire rack and then store in an airtight container.

Enjoy !!!

Note: I had crushed some extra sugar and cinnamom mix, so had some ready for rolling the cookies in it for the last batch. The dough was a bit dried by then I think and so it looked a bit cracked at the edges...but the earlier lot was more smooth...as I said ...different looks for each batch.
The taste was amazing...really out of the world !!!

Instead of extra butter you could alternatively add a couple of spoons of milk if the dough is too crumbly.
You get about 24 - 30 medium sized cookies with this recipe.

In spite of all my misadventures - I had great fun making them - they tasted amazing - all 5 batches of them - got a chance to gorge on more in the guise of checking each batch as it came out...:-)

Ok...in all of the above forgot to mention the whole purpose of this, the reason for my making this cookie in the first place.....was that T's bil was on his way back from A'bad, and off to the US.
On his way in he barely had a night here - so could not meet any of the Mumbai gang...and this coming Saturday - he would be here for about half a day - so we decided to have a Tea party...so quaint that word sounds...nyways...

So the menu was tea, coffee of course, with juice and soft drinks for those who preferred cold instead of hot beverage...and an array of snacks...
And what would a tea party be without cookies....so voila!!! there you have it...

And what's this below you ask...this was the next day preparation...I made some mini muffins ....these too turned out amazing...they were eggless, chocolate, with a lovely topping which included crushed nuts, my new ingredient of chocolate drink powder and also some crushed sugar & cinnamon(leftover from this cookie). The recipe for this for some other day and another post...

Eggless Chocolate Muffins

Now hoping that all enjoy these and hope you get to make & enjoy it as well....
