Rice Kheer

Rice Kheer

This plan happened in a very roundabout way...in the morning I started thinking about breakfast, lunch, dinner etc...as in what to prepare...what to organise..what I need...what I have...and such...

I had made some dosa batter...with rice, udad dal, ( the whole process...of soaking, grinding, fermenting etc..) ...had then proceeded to make dosa, sambhar, chutney for lunch a couple of days back...and had some leftover batter...so as I said in my thoughts was to use that up...and decided I would  steam it & voila we have dhokla....that decided on, was wondering what else with that...when hubby suggested kheer( hmmmm )....good idea - rice kheer goes really well with it....and that is how this post came about...made it ...took some pictures ...and decided to put it down...

With re. to kheer or payasam ( as we call it down south...er Southern part of India ) ...there are a lot of options, we make it with sabudana, rice, dal(s), vermicilli ( think I have covered most of it ) but with dhokla normally at my in-laws place it is made with rice...so that was what it would be today...

This is another very simple recipe ( my favourite kind )...and the end result ...awesome....and can be had just by itself, or with dhokla as we plan to later...or it could be served as dessert after a meal...any which way it is delicious...




This can be done with cooked rice ( thus using up leftovers ) or make some rice prior to the whole process or even cook the rice along with the milk...I used the second...i.e. made the rice separately then added it later to the milk...

So here's how I went about it...

Ingredients:

1/4 cup long grain rice
500 ml milk
130 gms condensed milk ( approx. 1/3 of 400gms can )
2-3 Tblspns of sugar ( as per taste )
2-3 cardamoms powdered
a few raisins, chopped almonds
1 tsp of ghee

Method :

1) Cook the rice till done - it should be a little overdone i.e. soft. Roast the chopped almonds in ghee. Remove and add the raisins in the same ghee for a minute. Take it out and keep aside.
2) Put the milk in a pan and bring to a boil, then lower the flame and simmer for about 10 mins, stirring occasionally till it thickens a bit.
3) Mix in the cooked rice, condensed milk at this stage. Let it simmer for another 5 mins.
4) Add the cardamom powder and the chopped almonds, and raisins along with the ghee and switch off the pan.

This can be served hot or it can be refrigerated and served cold - either way it tastes amazing.

Tip : If you do not have condensed milk - you could just take another 250 ml of milk, bring to a boil, then reduce flame and simmer till it reduces to half it's volume and add sugar to taste.

Dhokla was great, kheer had turned out really perfect...so what was the hitch ??? well hubby loved the kheer by itself but told me that when they make kheer to have with dhokla it should not have any nuts or raisins etc...it should be made with just milk, rice, sugar & cardamoms....at least that's how they have it at their place...
What ???  so...what do we do ??? we finished the kheer totally :-)....
